Hickory Pit’s Mystery Pie
A favorite place for lunch, just down the street from NWC was the Hickory Pit restaurant in Oklahoma City.....several times a month, we’d hop in the car and take off for the Pit - couldn’t get enough of their famous Mystery Pie.....several years ago good friend Joan (Austin) Thomas and I were talking about this specialty from there and she said she had the recipe. Sure enough, love that taste (like toasted marshmallows) and that texture (crisp and chewy all at the same time).
4 Egg Whites Beaten Stiff and Dry
1 Cup Granulated Sugar
1 Cup Ritz Crackers Crushed Fine (24 crackers)
1 Cup Chopped Pecans
1 Teaspoon Vanilla
1 Teaspoon Baking Powder
Gradually beat sugar into the beaten egg whites. Stir in the remaining ingredients. Pour into a 9- inch greased pie pan. Bake at 350 degrees for about 15 to 20 minutes or until light brown on top. Cool after baking and then top with whipped cream when serving. Keep refrigerated.
Note: I substituted “Low-Fat Ritz” and they worked just as well as the regular Ritz.
