Hominy with Green Chiles and Cheese

“For all you hominy lovers out there, here’s a simple supper dish my mom makes” says NWC classmate Newkirk. “This is a nice side dish, or a meatless main dish.”


     2          standard cans Hominy, drained

     1          4.5 ounce can chopped Green Chiles, drained

     1          cup Velveeta or other processed American Cheese


The idea is to melt the cheese and combine with hominy and green chiles, stirring until smooth and hot. You can do this in a double boiler, a microwave, an oven or over VERY low heat. Just be careful not to scorch the cheese. Serves 3-4.
