Coney Island Chicken Kiev

Keeping up with his need for Tex-Mex, Wayne came up with his version of Chicken Kiev - all the flavors of a Coney Island hot dog nestled inside chicken. Wayne says his dish has a unique flavor. I think it sounds pretty good and might even go a step further and drizzle with a little queso.
2 large Chicken Breasts, skinned and boneless
French’s Yellow Mustard
Unseasoned Bread Crumbs
1/2 cup shredded Cheddar Cheese (2-ounces)
Chili - canned - with or without beans or made fresh
With a meat mallet, flatten chicken breast. Coat the inside and out of each breast generously with mustard; then sprinkle to coat both sides with bread crumbs.
Place 1/4-cup cheddar cheese inside each flattened breast, add chili and onions.
Fold and seal the flattened breasts over the filling and bake at 400 degrees for 30 minutes.
